Busy, busy, busy!!!
King Cakes, Stromboli, and brownies so far. The aromas are so different, yet SO DELICIOUS!!
This week, there will be Sicilian Tomato Pie - Sfincione. I LOVE THIS BREAD!! My grandmother, Nana, made this for us when we were growing up. We had meatless Fridays throughout the whole year. So Nana made this pretty often.
This tomato pie is to die for. It’s light, airy, crispy, tomato-ey, crispy on the bottom, and so flavorful. My younger sister and I always fought over the center piece, which was the gooiest.
I now serve it to my family as a side for winter soup, stew or Winter Salad. It’s also an amazing breakfast on its own. I like to put it into the toaster oven and warm it up. My husband and sons love it cold.
Next Saturday, February 24th, the Winter Salads Class is happening. So excited to offer this class. I always look forward to enjoying different styles of foods. I sometimes get bogged down with winter meals. I make lot of soups, stews, braised meats in the crock pot. However, I need to change things up. Having a salad in the winter sounds unusual, but I love to use seasonal ingredients. SO, my winter salads include roasted veggies like butternut squash, sweet potatoes, beets, etc. So TASTY!! Warm vinaigrette dressings make these meals so appetizing and delicious.
