Closing Out Winter

Been busy baking and prepping for our Winter Salads Class.

Worked diligently on updating my Sourdough Sandwich Bread recipe. I discovered that the lactic acid in my starter was to acidic. My starter is almost 30 years old. I keep it in the fridge between bakes. I have noticed that the past few bakes were creating breads that did not rise well and were more dense than I would like. The starter was so acidic, that it was killing off the good bacteria. So, I did more research, consulted several experts and made more than a dozen loaves of bread. I am SO EXCITED!!! The sandwich breads are TENDER, TASTY, TERRIFIC AND rose beautifully. Friends and neighbors love when I do a bunch of test bakes!!

Sourdough Sandwich breads will be back on the menu.

Yesterday, Saturday, February 24th was fantastic.  The Winter Salads Class was delightful!!  These 2 ladies were new friends by the end of the session.

We created salad dressings by understanding how to incorporate the 5 tastes successfully.  Each lady then created her own custom Winter Salad.  Lots to learn and lots to taste.  Had so much fun.  We ate, talked, and ate some more.
