Does the, “Choux” fit?

Today’s the day!! Putting on the, “Choux”s. 

I am so nervous.  I found everything I could do to delay beginning.  Took a shower, took Olive for a walk, cleaned the kitchen (AGAIN!) Fed my sourdough starters.  Read a few recipes.

Began and made the paste.  They’re in the oven.  How long I could stand in front of the oven became unbearable.  So, I’m sitting and writing (my least comfortable thing to do)

Out of the oven.  I think they look good. They puffed up and are very light.

They are a bit smaller than probably the correct size. 

I’ve watched several videos about the process.  A few recommended poking a hole in the bottom to allow steam to escape better.  I poked holes in the bottom of 1 pan and left the others to cool with no pokes.  NO DIFFERENCE.  Both pans have light, crispy, gaping insides for filling with deliciousness.  WOOHOO.

The, “CHOUX” FITS!!  I’m counting this as a win!  Recipe One – Páte À Choux – SUCCESS!!

Now to fill them with some Chantilly Cream and give out to some of my neighbors.
