Puff Pastry - Day 1 (Again!!)

Today is, “another day”.   Lots of stuff done today.  Boiled eggs.  Made vegetable stock.  Thank you José Andres for teaching me to use everything and be less wasteful.

Made my Tasty, Tingling Tomato Sauce. OOhh….garlic, spices, tomatoes, extra virgin olive oil.  Love to dip bread, crackers, shrimp in that sauce.   

Puff Pastry Day 1 was quite an adventure.  Mixing the dough by hand.  Adding vinegar to relax the gluten.  Measuring the dough’s temperature and length.  Making sure the dough’s shape and measurements were exact.  I had to practice precision.  Not my usual, “I’ve got this!” and jump head first and crash through everything. 

So, now the 4 times folded and tightly wrapped dough rests in the refrigerator.  Tomorrow is Day 2.  2 more turns and rests for the dough.  Then shaping.  The recipe in the book suggests several uses for puff pastry.  I think I’ll keep it simple and make Palmiers. 

I am so nervous about leaking butter!!  What is wrong with me???

So, tomorrow, we’ll find out if I can make flaky dough.  You would think being flaky would be a natural for me!!
